Buffalo Chicken Mac and Cheese

Really simple meal prep or dinner recipe. Spicy chicken and cheese.

Ingredients

  • 1 pound 93% lean ground chicken
  • 1 small yellow onion, peeled and minced
  • 4 cloves garlic, peeled and minced
  • ¼ cup Noble Made Medium Buffalo Sauce
  • ¾ cup 2% plain Greek yogurt
  • ¼ cup King Arthur Better Cheddar Cheese Powder
  • 8 ounces Banza pasta shells, cooked according to package instructions

Instructions

  1. Heat a large nonstick skillet over medium-high heat. Add chicken, onion, and garlic and cook until chicken is no longer pink, about 8 minutes. Stir in buffalo sauce and cook 3 more minutes or until mixture starts to thicken.
  2. Whisk yogurt and cheese powder in a small bowl until smooth. Fold into chicken mixture and stir to mix well. Add cooked pasta and mix to coat. Allow to cool.
  3. Divide evenly into six airtight containers. Cover and store in refrigerator until ready to eat, up to 1 week.
  4. To serve, transfer to a skillet and cook over medium-low heat 5 minutes or until heated through.
