Energy Balls

Quick and easy on the go snack

Ingredients

  • 2 tablespoons grass-fed butter
  • 2⁄3 cup no-sugar-added creamy cashew butter
  • 1 cup unsweetened shredded coconut
  • 5 drops liquid stevia
  • 1⁄4 cup crushed cashews

Instructions

  1. Heat butter in a small saucepan over low heat. Once melted, add cashew butter and stir until smooth.
  2. Stir in remaining ingredients.
  3. Line a baking sheet with parchment paper and drop mixture by rounded spoonfuls in a single layer.
  4. Freeze 1 hour. Remove from freezer and transfer to an airtight container. Store in the refrigerator until ready to eat.
