Firecracker Chicken

Ground chicken in sweet and spicy sauce. Make some veggies to go with it and you're good to go.

Ingredients

  • ½ cup Swerve brown sweetener
  • ¼ cup Noble Made Medium Buffalo Sauce
  • 2 tablespoons unsweetened applesauce
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon ground ginger
  • ½ teaspoon red pepper flakes
  • 1 teaspoon avocado oil
  • 1 ½ pounds 93% lean ground chicken

Instructions

  1. Add sweetener, buffalo sauce, applesauce, vinegar, salt, black pepper, garlic powder, ginger, and red pepper flakes to a medium bowl and whisk until smooth. Set aside.
  2. Heat oil in a large skillet over medium heat. Add chicken and cook until no longer pink, about 8 minutes. Pour sauce over chicken and stir to coat. Cook 1 more minute. Remove from heat.
  3. Divide evenly into six airtight containers. Cover and store in refrigerator up to 1 week, or in freezer up to 3 months, until ready to eat.
  4. To serve, transfer to a skillet and cook over medium-low heat 5 minutes or until heated through.
